Employees of South Ural State University have created chips that, they claim, are beneficial to health rather than harmful. What we typically consider “junk food” has, this time, been made with “healthy” technologies.
Ural chips contain essential proteins and unsaturated fatty acids needed by the human body. Moreover, the raw materials for production come at practically no cost.
Scientists at South Ural State University have developed a method to process the oilseed cake left after pressing rapeseed oil.
Rapeseed is a plant with tiny yellow flowers and black seeds. Traditionally used as animal feed, it was once deemed unsafe for human consumption due to glycosides and erucic acid. However, in the mid-20th century, rapeseed oil began to be used in the food industry, and its production technology is now well-refined.
Rapeseed is also grown in the southern and eastern parts of the Chelyabinsk region. But after oil pressing, a residue known as rapeseed cake remains. This byproduct has now been harnessed to extract many beneficial components for human health, primarily protein, which is crucial for muscle recovery, especially after physical activity.
The base for the chips has been patented.
The technology works as follows: first, the rapeseed cake is defatted, and a dry powder is extracted from it. This powder can be mixed with regular culinary flour or used separately in its pure form.
Next, the powder is combined with meat or vegetable broth and sautéed vegetables, creating a red sauce that serves as a base for chip preparation. South Ural State University scientists even obtained a patent for this sauce several years ago.
The following step is turning the sauce into chips.
But instead of frying, the chips are made using a device that combines the functions of a convection oven and a steamer. This appliance allows for steaming, baking, frying, and stewing with hot air and steam, preserving the maximum health benefits of the ingredients.

According to the developers, the healthy chips are currently undergoing production testing at a local small enterprise. Besides chips, there is also a possibility of producing confectionery bars based on the same rapeseed cake extract.
