At the end of the 19th – beginning of the 20th century, the Filippov bakery gained widespread fame in Moscow. It was founded around 1874 by Maksim Filippov, and his son Ivan turned the family business into a successful company, “Filippov Ivan and Heirs.” There is a version suggesting that it was thanks to Filippov that raisin buns appeared in Moscow. One day, the Governor-General of Moscow, Zakrevsky, found a baked cockroach in a Filippov bun and demanded an explanation from the baker. Filippov ate the bun on the spot, claiming it was a new recipe – a bun with raisins. Returning to the bakery, he actually added raisins to the dough and baked a new batch of buns. To everyone’s surprise, the novelty was loved by customers, and raisin buns became an indispensable part of the menu.
